A Pole is expanding a restaurant business in Norway. Paweł Macioszczyk opens a new chapter in Sandnes
Just a few months ago they told us they were preparing something new. At that time they did not want to reveal all the details. One thing was clear – after years of building a catering business in Randaberg, Paweł and Patrycja Macioszczyk do not intend to stop. Today another fragment of that story is beginning to be visible. Drivhuset is moving beyond Randaberg, and a new concept is set to appear in Sandnes center. One of its distinguishing features will be the sale of food by weight.
Norwegian Bygdebladet reports that Paweł Macioszczyk together with his wife Patrycja are expanding their business and moving their concept to Sandnes center. The local paper describes their activity in Randaberg so far as a success and draws attention precisely to the new sales method – mat på vekt, that is food sold by weight.
For us this news has yet another dimension. This is not the first time we have heard about these plans.
In March they told us that Sandnes would be next
When we previously spoke with Paweł and Patrycja about Drivhuset, the topic of another location was already very concrete.
Paweł spoke about Sandnes and emphasized that it was not about creating an ordinary copy of the restaurant operating in Randaberg.
The new place was supposed to be a different concept.
At that time he did not want to reveal all the cards.
In our March piece we wrote:
the new location is not meant to be another branch operating exactly according to the same scheme. It is to offer something different.
Back then the plan assumed an opening around 1 September. Today we have another piece of this puzzle – Bygdebladet confirms the move toward Sandnes and reports on the sale of food by weight.
However, we do not have grounds today to confirm the exact opening date of the new location. And we will not guess that.
It did not start with a restaurant
Paweł and Patrycja’s story is interesting precisely because it did not start with a large premises, an established brand and a full dining room.
From our earlier conversations it appears that they started operations in 2017 with catering.
Later there were further gastronomic experiences – among others a pancake place and Polish open-faced toasted sandwiches in downtown Stavanger. Over time the idea evolved toward a larger restaurant.
Drivhuset Restaurant in Randaberg was opened in 2023. The restaurant itself now states that the team has over 20 years of experience in gastronomy. The premises at Vistnesveien 5 can accommodate about 100 guests and, in addition to restaurant operations, offers catering, private event services and solutions for companies.
This is important because it shows the scale of the change.
From catering.
Through successive trials.
To their own restaurant.
And now – to the next town.
Poles created a restaurant, but not only for Poles
This is also one of the more interesting elements of this story.
Drivhuset is a company run by Poles, but it was never intended to be confined solely to the Polish community.
When we spoke with Paweł, he told us that the largest group of the restaurant’s customers are Norwegians.
This is seemingly a small detail, but in reality it says a lot about running a business as immigrants.
You can create a company that serves mainly your own community. You can also try to enter the local market and compete there on exactly the same terms as Norwegian companies.
Pawel and Patrycja chose the second path.
Drivhuset currently directs its offer to individual and corporate customers from Randaberg, Stavanger and Sandnes. The restaurant combines traditional dishes with more contemporary offerings, and runs take-away and catering.
Food by weight. A simple idea, but a different model
Now Sandnes appears.
From the headline and preview of the Bygdebladet piece, it is clear that one element of the new activity will be the sale of food by weight.
So the customer does not necessarily have to choose a fixed item from a classic menu. The model itself allows building a meal according to one’s own choice, and the final price depends on the amount of food.
We will not add details about the full offering of the new place for now.
It is worth recalling what Pawel told us earlier: Sandnes was not meant to be an ordinary “Drivhuset number two.”
And it is now that we begin to understand what he meant then.
A new company was also established – Drivhuset Express AS
There is one more fact that shows the plans have already gone far beyond the discussion stage.
On 10 August 2026 the company Drivhuset Express AS was established, and on 26 August it was registered in Foretaksregisteret.
The company's managing director is Patrycja Malgorzata Macioszczyk, while Pawel Dawid Macioszczyk is chairman of the board.
The company's officially recorded purpose is to operate a restaurant together with catering and take-away services and activities related to them. The company was registered with share capital amounting to 30 000 kroner.
The name Drivhuset Express of course fits the concept being developed well, but at this stage it is worth keeping journalistic precision: the company register lists the firm's address as Vistnesveien 5 in Randaberg. The registry entry therefore does not yet confirm the address of the new premises in Sandnes.
First it was necessary to build Randaberg
It is easy today to look at the news about another outlet and see only the effect.
A second location.
A new concept.
Sandnes center.
But a company's development rarely looks so straightforward from the inside.
When we visited Drivhuset earlier, Pawel and Patrycja also spoke about problems, the need to hire more people, maintaining quality, and that running a family business requires not only an idea but also a huge amount of daily work.
The restaurant in Randaberg had to expand along with its customer base. Additional space was added, catering and event services developed. The owners also mentioned situations in which, without advance reservations, there began to be a shortage of tables.
Today Drivhuset's official website describes the restaurant as a place operating since 2023 for both local guests and families, as well as for businesses.
It is on this foundation that the next stage is being built.
The Norwegian press notices the Polish owners' business
There is one more element in this story that is worth noting.
The local Norwegian press is now writing about the development of Drivhuset.
Not because the owners are Polish.
The topic is the development of a local enterprise.
Bygdebladet presents Pawel and Patrycja as people who have built their position in Randaberg and are now moving the concept further – to the center of Sandnes.
And maybe that is the most interesting thing.
After years of living in Norway we often talk about integration as something abstract. About language, regulations, work or participation in the local community.
But economic integration sometimes looks very concrete.
Someone arrives in Norway.
They work.
They start a company.
They try.
Not everything works out right away.
They develop new projects.
They hire people.
They gain local customers.
And after a few years a Norwegian newspaper writes no longer about "a Polish restaurant", but about a local entrepreneur who opens another branch.
And perhaps at this point the story becomes bigger than gastronomy itself.
Pawel said that this is just another step
When we finished our previous piece about Drivhuset, we wrote that everything suggests that for Patrycja and Pawel Randaberg is a stage rather than a finale.
A few months later it is clear that it was not just a declaration.
A new company was created.
The Norwegian press reports on the expansion.
Sandnes comes into the picture.
And the earlier announcement of an entirely new concept begins to take concrete shape.
We don't know everything yet.
We do not know the full offer and we will not guess it. We also do not confirm the opening date or the exact address of the new location until this information is clearly public or until we receive it directly from the owners.
But one thing we can say today.
The Drivhuset story has just gained another chapter.
And for Pawel and Patrycja the road from catering, started in 2017, through their own restaurant in Randaberg, now leads to the center of Sandnes.
We will follow up to see exactly what is being created and when the first customers will be able to see the new concept for themselves.
